  1. Temp Control For low temps, I usually close the top and then turn it with one hand and hold the other hand above the edge of the damper top until I can feel the heat rising. Then I go down below and fine tune.. As long as you feel the heat, your coals/burn won't die. Remember this is all about keeping the heat in and reducing airflow so your food won't dry out.
  2. Upper/Sear Grill The handles are now larger to make the grill more stable inverted down below.. Using gloves is a must in this situation.. Read Dangerous... Upper Over Upper over and Hot! Does not take long!
  3. 1/4" upper/sear grills I have 1/4" upper/sear grills in stock in Atlanta... $64 + postage.
  4. Re: Guru termperature probes But the Maverick meat probe has a 90º turn and needs to be gently, partially straightened. BTW It's actually a sleeve/tube not just a pre-drilled hole..

  9. From the first week in March until now.. Damn I'm proud.. Of course I could not have done this with out you.. Thank you for supporting and believing in Komodo and myself. Building these cookers is really satisfying and it's an added plus to have the support and appreciation for what I'm doing.. and I've only just begun.. I have lots of ideas and our quality just keeps improving.. What I shipped a few months ago could never get out the door today.. This forum has really evolved to where is is today.. those of you who have been here from the gitgo have seen this evolution. I think we all should be proud of where we are now.. Thanks again to all..
  10. The light layer is the dense refractory material designed to contain temps up to 2,200ºF. The darker layer is the insulating material..
  11. Last I checked all ceramics boast that they cook better than the steelies because they are insulated.. hello insulated? A dense ceramic (portland or glazed) material by definition is NOT insulating. But they are correct in saying that they are more insulated than the thin walled metal cookers.. Welcome to the land of common sense design.. All Komodo's have a purposely designed for insulating jacket outside the dense refractory material inside.. Finally got around to sawing one open to show you all what it looks like.. Ok enough boasting.. here it is.. Yup I'm laughing..
  12. Here you go 6" vs 8" Here you go 6" vs 8"... As you can see the 6" size really holds/cradles/cuddles the chicken tight.. 8" is larger than you would expect.. Makes a bird feel small.. Did I say that?

  15. The area where the tiles come together at the rear of the OTB, the boat tail I like to call it has always been a challenge for the artisans how do the tiling. Recently they have gotten it down to where it really looks good. I had an epiphany the other day and cut and set a piece of 3mm stainless as a dividing rib.. Here's the first one, for John in MD.. His second KK. Is that clean or what?

It does not happen often Spelling.. it's that damn spell checker DJ installed.. gotta click submit! 126 000 cubic meter = 102 acre feet 1 square mile = 3097600 square yards = 640 acres. 102/640 = .16 x 12 = 1.9" That's still a whole lotta smelly mud!
  17. Re: Pre delivery ? Grout sealant I'm not sure how long it's been but it's safe to say anything shipped this summer was pre-sealed.. I'm sending out a container tomorrow and all those cookers are not only pre-sealed but come with a small bottle of sealer good for a couple of years...

On May 28th improperly drilled well hit a reservoir of hot mud under pressure. This has turned into a disaster of Biblical proportions... 1,800 meters into the exploratory gas well being drilled near Surabaya, the drillers attempted to shake loose a stalled drill bit and it broke or disappeared, a torrent of stinking, toxic mud and hydrogen sulphide gas boiled to the surface, spraying gas 10 meters into the air. For the first couple of months 50,000 cubic meters a day shot thru the 6" pipe.. They can't and probably will never be able to stop it.. There will be a mountain there soon.. At present 11,000 people are homeless.. It's now coming out at 126,000 cubic meters a day. For you metric clueless a M3 is a cube 39" X 39" X 39" That's an area 10miles X 10miles 13 feet deep EVERY DAY! Wanna read more...   20. Made cuts into the pork to get better penatration of the Habanero brine and the Cajun/Thai chili rub... Tied and smokin' on the main grill with a big New Zeland sirloin slab. Lot's of smoke @ 235º Ribs on the upper grill.. First peek.. Looking good.. Beef pulled at 145º after 5 hours.. Note the flavor cuts.. This was the best ever.. warmed your mouth! Loose chicken parts rubbed and cooked on the upper.. Very tender! Mouthwatering... Searing at very high temps on an inverted upper grill.. Auto focus would not worK!! Lot's of sammies on the way.. Life is good
