  1. The only wood available here for smoking is Hickory and Mesquite both available from Ace Hardware, imported from the states.. (don't ask the price I'm ok with the Hickory flavor but getting bored with it.. The Mesquite is too strong for most of the family.. I heard that there are apple orchards in the mountains and asked friends to source some for me.. What showed up was a bundle of small branches and sticks.. All with skin/bark. Is this skin/bark going to cause a problem? The Hickory has the big thick bark sometimes.. Any input would be greatly appreciated here as I have a butt and ribs in the fridge that I want to put on.. Miss my Q!!
  2. Not on the Ferry or on the Plane! Nor was I on the Ferry that sank.. Or On the plane that crashed and disappeared.. The bad news is that there was an American and his two small kids who lives here in Surabaya on board and my best friends wife's hairdresser who I have known for 15 years..

  4. It's nice to be back.. I'm back.. And will be catching up on all your Emails.. Sometimes one just needs to put it all down and get away with the family. Trying to keep up with all the inquiries just got to be too taxing along with my holiday schedule.. so I hope you all understand my "please wait until I get back" replies..   5. Just wanted everyone to know that myself, family and friends are fine and were nowhere near the bombs..
  6. Latch Adjustment When you close your cooker the latch should just catch. Then you should press down on the handle and press the latch handle towards the body. The top should now be held securely held closed and you should not have any movement when you press down on the handle. If this fails to do the trick please write me and I'll post a photo by photo instruction guide to re-seating the top half. But it's basically releasing the spring tension and then loosing up the four top bolts on the hinge. your top and lower half will now be perfectly aligned. Tighten up the bolds and the spring tension and volia your cooking airtight..
  7. Other customer in Metairie is named Murphy! I got a good laugh out of that.. I was referring to Murphy's Law as in "if anything can go wrong it will".. Not his wife... This is really fcu-ked because, that these things are not simply misplaced.. They just don't go anywhere with out a concerted effort, there must have been lots of collusion involved.
  8. First time for everything.. Sent out my second OTB to Metairie LA in one week but this one went missing along the way. Went online and saw it's status was O, S & D... Wrote them and was told this stands for Overage, Shortage or Damaged….. and my shipment showed up at the destination terminal "short" so they have an “All Points Bulletinâ€

  12. Was offline yesterday as I was on the road, in the sky and too tired to answer Emails by the time I got in.. Replies may be delayed a bit but they should still be with in 24 hours. Myself and my family wishes the best for you during the coming Holidays and thanks you all for your support this last year. I'm truely amazed we now have over 8,000 posts.. The forum and cookers have had a great year.

  14. moisture.. I will very carefully monitor the weight of the cooker to ensure the material is very dry.. But my guess is that the vapor will of course take the path of least resistance and make it's way to the neck and escape..
  15. This is mind boggling. Sort of makes you feel about as insignificant as a dust mite. Gives you a little perspective on our place in the universe. Antares is the 15th brightest star in the sky. It is more than 1000 light years away. The universe is so vast it is not comprehensible by the human mind. The universe humbles us, as it should.
  16. This project actually started about one full year ago.. There have been sooo many dissapointments and outright failures. But we finally tracked down an old world master metalworker and this is the result of his first attempt. He wants to use thicker metal next time.. He can have what ever he wants... This will never be done in large numbers but I'm dreaming of this sitting in a in a nice teak workstation as the ultimate Komodo.. What ya think? Saweet huh?
  17. Although it's connected to my existing facility, I just took over this 10,000 sqft area to move Komodo into. Rather than rob the flooring production of more space for Komodo, I contracted this space.
  18. Guru port plug The newest plugs actually have a small wad of paper inside so they will implode and fall apart..
  19. How 2 load her up for the long and slow.. I pour all the charcoal into a big wash basin or box.. sort it into large, medium and small pieces. I first put the large pieces into the basket then fill the spaces with the medium followed by the small like a big puzzle. The secret is to have as much surface area of the pieces touching so that they will light each other.. I then fill a charcoal starter with smalls and once they are all burning red, pour them evenly over the top of the mound, use tongs to ensure there are some burning coals all around especially up front and around the edges where there is less airflow. I cheat and use a hair drier to speed the spread at first.. When I have charcoal burning all over I close her up and never worry about running out.. Loading this way ensures the coals can always burn into the new fuel..

  22. 1100º will delaminate your gasket if it's on the damper top +- 1100º will vaporize the high temp silicone that attaches your gasket if it's on the damper top not the chimney. But then again, it will vaporize almost anything.. For those of you who missed it.. This cooker was opened up and let go.. within 6 minutes the needle was wrapped and the dome was around 1100ºf. If you really feel the need to dabble in these insanely high temps, (which I don't suggest) I'd recommend attaching your gasket to the lower side of the damper top. It won't take the direct blow torch effect down there and will do just fine.
