@MacKenzie What's in the sausages? The texture looks very course and if the color is true - it's yellow inside?

@Kevin H Not familiar with the "ice cube method?" Were you cold smoking at that point?

Tony, yes the smoke house likes to have a more coarse grind on their pork. I think the colour is off, don't recall the meat being that yellow. It's that time of year when all the lighting is artificial.

I always like your cooks Mac, they look delicious. Now I want to cook some sausages.
Speaking of cats my daughter talked me into adopting two little kitties Mika and Sheeba they are about 13 weeks old now. They like to sleep in the sink go figure?

Should have captioned my pics better.  That was a shot of the tri-tip after I had let it cool and cubed it up for prior to vacupacking / freezing.  Thought it was a good shot of what a nice cut of beef tri-tip it is when smoked to medium rare.

Killing me, MacKenzie! Everything looks awesome, as usual! Just curious on the Ina Garten's dish, what's the slabs of white stuff on the side - sous vide chicken/turkey breast?

I had a nice simple dinner tonight as my wife is over east and I had a big lunch.

Chicken breast coated with mad hunky hot whang rub on toasted Turkish with cheese and franklins bbq sauce, this one definitely got the spot!

Hey mate it’s a vinegar based sauce, really nicely balanced and not overly sweet. One of the bbq team members that owns a bbq shop has just imported it.
