I like my steaks on the med-rare side, so I do mine @ 127F for at least 2 hours, if it's a good cut of meat, I'll go 3 hours if it's regular supermarket quality. If you like rare - go down 5F (122F), medium - go up 5F (132F). Then a quick reverse sear (2 rounds of 30 secs on each side) and rest 5 - 10 mins. 1 1 Quote
MacKenzie Posted December 8, 2018 Report Posted December 8, 2018 @Tekobo, yes sous vide @132F and I was doing some errands and it ran for 4 hours. Actually in real life it was a little more pink than in the pix. 1 Quote
alimac23 Posted December 9, 2018 Report Posted December 9, 2018 I done my maiden rotisserie cook this evening, I decided to cook both the chicken and pumpkin using the rotisserie and for a first attempt they were both a success.I started off with the chicken indirect and the pumpkin direct over the coals.Once the pumpkin had cooked, I removed the basket and flipped the chicken over the direct side to finish cooking.Another 25 minutes or so and we had this. And unfortunately I was looking forward to it so much I forgot to get a completed cook pic, but here is a piece plated.Sent from my iPhone using Tapatalk 7 Quote
