Aussie Ora
That plate looks delicious @Aussie Ora. Is that cheese or a Hollandaise sauce on the broccoli? Cheese sauceOutback Kamado Bar and Grill

tinyfish
Some baby backs.... This was a last minute cook so I didn't rub the racks the night before. I did find that rubbing them an hour or so before cooking that the ribs held the flavor of the rub so much better then the night before.

Pequod
Used the basket splitter to do some reverse sear prime strip steaks. Cooked at 275'ish, then let 'er rip for reverse sear directly over the coals. Very impressed by how quickly the KK goes nuclear. Starting the reverse sear: Might as well grill some onions once the steaks are done: Can't believe I almost forgot the money shot! I'm in love.

Pequod
Thanks! Lately I've been using Oakridge BBQ Carne Crosta rub for my steaks and loving it. It's a coffee based steak rub that adds tons of flavor and makes a nice crust.
tony b
Nice steak, looks perfect! I've tried Carne Costa. If you like that, try the Lane's BBQ Ancho Espresso, another winner.

tony b
All of them. Seriously, all of them! Get the sampler pack and try them out. http://www.lanesbbq.com/store/lanes-bbq-rub-gift-set (In the Size pulldown box, choose Sample). QNami is one of my favs now. The Signature is excellent as well. tinyfish
@Aussie Ora when you rub the ribs the night before its like the rub melts away.

tony b
Depends on how much salt is in the rub whether overnight helps or not. High salt = dry brining, so you need to give the salt time to penetrate into the meat and hopefully take some of the other yummy bits in the rub with it.
