  1. Weekend, daughter coming home from college..... got to have pizza, right? Well at least an excuse to have pizza, if we need one. Medium thick crust, supreme style 15" pizzas with sauce, mozzarella cheese, green peppers, onions, pepperoni, crumbled bacon, black olives, a local smoked sausage. Crust edges painted with garlic butter. Heat sink the grill for a little over an hour. About seven minutes with the stone on the upper rack and dome temp about 550F. Turned out just how we like it and plenty of leftovers, which is also how we like it. Easy and much better than retail.

  2. Decided I would make burgers and do the ribs today ..gave them some rub...then prepped some pineapple. . Looking good. . Added some high melt cheese. . Then threw on the pineapple. .   3. Smashed up some spices in the grinder tonight and dry rubbed a rolled pork shoulder. Turned out way too much food just for 4 of us but hey ho . I’m gonna have to put the brakes on cooking on this damn thing [emoji16] at least for a couple of days anyway ! Either that or start posting invites for the whole god damn street to call round [emoji23]. For sides did some Pak Choi / Spring Onions and a drizzle of Oyster Sauce . Cookers now redundant in the house [emoji536] 🤣. Microwave still operative for our 7 year old daughter . Having fun experimenting , Pizza next I’m told by the missus [emoji847]. Wahoo .   5. Great looking Kebabs. Last night I made some Tsukune Kebabs that were definitely too moist. The fire Gods were trying to grab them off the skewers and I had to break out a screen. I hate using the screens but didn't want to give up my dinner to the fire Gods.

  6. I think I would be ok with those leftovers for a while. Looks pretty incredible. By the way, those are some really nice pics. The night shot of your 42 humming away belongs on the front page of a brochure.

  7. This week’s loaf is Trevor J. Wilson’s Champlain Sourdough, which is mostly white bread flour (I used Giusto’s Artisan) with a touch of fresh milled spelt and fresh milled rye. Trevor has an ebook called “Open Crumb Mastery” in which he contends that open crumb is 80% fermentation and dough handling and 20% other factors. Whilst most amateurs are fixated on hydration, Trevor says they’re looking in the wrong place. This loaf was only 70% hydration, using techniques from his book. I think I believe him. Next week I’ll begin experimenting with a higher proportion of spelt and rye, and also replace about half of the bread flour with high extraction hard red wheat. I’ll also boost the hydration a bit (75% for starters) due to the higher amount of whole grains. Once I have everything dialed in, I’ll move my indoor baking back out to the KK.

  10. Well it was certainly a much more interesting game than I anticipated! I was feeling bad, especially after Tony’s comment of stealing candy from a baby. Turns out the old ‘Cuse did way better than I could have imagined in Death Valley. I love college football too. Your challenge made this game even more fun! Thanks Jon.

  11. @Grant @Aussie Ora @tony b It was a valiant effort on the part of Syracuse, leading until the last two minutes. Feel bad about the injury to the Clemson QB. Hate to see that happen to any player. I have Aussie's address....Grant please PM me a mailing address where I can send your winnings (get your own chicken ). Tony you get some also for your nice POST-GAME UPDATE (will have my sister drop them off later this month). Will post a photo of the prize rubs & sauces before sending this this week.   14. Yes, that is a sheet of foil that I folder over and over to get some strength and it is just to calm the fire down after cooking. Trying to keep the oxygen out, it works better than I thought it would.

  19. You mustn't forget to feed the gods. They get angry otherwise! Great looking table. I am so jealous that you've already got your grill. Latest prediction I have received is for November delivery at the earliest. Wondering if @amusedtodeath and @Pequod will get theirs in time for Christmas. Is that foil that you have lined your grill with in the picture below? If so, why have you done that?

  24. Need to practice on this grill so thought I'd try some Persian Beef Koobideh Kebabs. Halved the recipe and forgot to half the egg so the meat was a little too moist and when that happens the fire gods will reach up and grab whatever they can get. I lost one to the fire. Plated.

  25. Dude, are you insane? Clemson in Death Valley is a slam dunk win for the red necks!! Seeing how their D completely demolished my Yellow Jackets last week, ya'll are in for a very long day!! As much as I hate Clemson (3rd only to Georgia & Notre Dame in my haters club!) - sorry, Jon, but I won't take the bet, as it would be like stealing candy from a baby! POST-GAME UPDATE: Well shut my mouth, the 'Cuse did a whole lot better than I was expecting. But, like I've known over the many years, it's really hard to be them in Death Valley - why do you think they call it that in the first place? (Yeah, it's damn hot on the field, too!)

  28. Tossed a Trader Joe's marinated (carne asada) roast on the KK the other night. About as simple as a cook can get! Add a nice salad, twice-baked (air fryer) spud, and some tasty red wine and call it dinner!

  29. Here are some shots showing the inside and the inside top. There is a ceramic tile in the bottom under the Konro. This top is very light and the outside top is not too bad either most of the wood is cedar. The outside top cover is waterproof as there is plywood under the cedar boards. The cedar is glued and screwed to the plywood.

  31. No harder than grinding coffee, with the right equipment (such as this mill). We'd all be milling flour if there was a drug in it somewhere.
