  1. I believe both have their merits.. that being said.. Freshness is SOOO Important when it comes to spices. My favorite analogy is that of pre-ground canned. store bought coffee VS freshly roasted, ground just before you brew it coffee. Once you try the latter you never go back. I always say that freshly ground spices are 70-80% more aromatic. I love WorldSpice.com in Seattle.. They will grind as you ship or send you whole so you can grind your own which is what I do. I buy small quantities regularly and put colored date stickers on the bottom of the bottles.. When they get old I use them as smoking material.. Montrial steak rub creates great smoke. I'm sure it's the rosemary which I smoke with all the time.. Dried chilies make great smoke but make sure it does not get in your eyes! Just toss the spices on your burning char and close it up and let it sit with your meat.. barely crack it.. Most important advice.. have fun!

  3. 20 lbs I'm not sure on the coffee.. probably only 30-40 because they are twice the size of the coco char. Palettes are 40lbs
  4. I started this coffee smoked bacon post but was remiss in posting the post sliced bacon.. The secret I found is to super chill the meat before slicing.. Firms it up and gives much more uniform slices.
  5. Yes and no.. I can send 600lbs to Chicago to a business with lift gate or fork lift for $168. CHECK non-residential delivery costs.. easy to deliver to a business and then throw in a trunk.

  7. Hi Tony, I just ran this to your house and it was $16 not 23 let me look into this. But still not cheap. Free shipping on Amazon is not really free. They just pad the price. For example, on my coco char they charge me $22 to warehouse, sell and ship to customer. This is after I pay to ship the charcoal to their warehouse.. That's why it's $44 on Amazon.
  8. The good news is I shipped a container of Coffee Wood LUMP Charcoal and it came in this week. The bad news is that NYK no longer accepts charcoal shipments in 40' containers. This is a big bummer because I used to put charcoal above the grills in my monthly containers. Argh.. now I need to ship it in 20' containers as semi-hazardous material.. paid for in full. This adds $7.5 to my per box cost on the lump and half that on the coco char. (lump is 2x the volume) I have raised the coffee char only $4 to $28 for the time being.. I'll get you all addicted to it before raising the cost. More good news is that it's truly premium lump designed to give you the most smooth coffee smoke flavor. Only large and medium pieces which have the most organic vapor in them.. The smalls are sold here in the local market.

  10. You can add as many boxes of charcoal to a grill order without changing the delivery significantly. They are already picking up and delivering hundreds of lbs with the grill. All charcoal burns the same time "by weight". The coco char only appears to burn longer because you can put more of it in the basket because it's more dense. A 23" basket can hold 16 lbs of coco char, at 235º it will definitely burn 80-85 hours. The 32 would hold more charcoal, about 30 lbs giving you about 120 hours. I'll do a full 32 burn this weekend.

  14. The usual suspects are small pieces of lump cutting off airflow or smalls and ash from the previous cook. Stirring only relieves airflow problems something that is rarely an issue with the KK charcoal baskets which breath soo well..

  17. I'd say today was a good start.. Labor Day emailing and Facebook posts brought in 11- 22" Supreme, 2 - 23" Ultimate and 1 - 32" Big Bad sales! A great day to say the least!

  20. The 22" Standing Supreme in some measurements is larger than the 23" Ultimate and carrying them both is redundant, and unnecessary. The grill has morphed into a Hi-Cap Table Top on steroids which complements the KK line well because customers want to replace XL glazed kamados in their built-in kitchens and the 19" was just too small. Yes it will have a lower tray with corner protection.
  21. Not sure what went on this weekend Stateside but we had huge day both on the website and forum. The cookie driven website traffic report showed 4582 unique IP visitors.. I believe this is a record but I'm not sure what drove the traffic.. Anybody know what could have driven thousands to the site? The forum also did well with 819 unique IP visitors
