Just look at that moisture, wonderful dinner.

Sous vide bacon wrapped beef tenderloin @132F for 4 hours. Then got out the KK torch to colour things up a bit.

Tony, I have never cold smoked my bacon, have always done the hot smoke route. What made you decide on the cold smoking method?
