  3. Happy New Year everyone. Thanks for the tips, encouragement and abetting in 2019. Wishing you all health, wealth and happiness in 2020. In whatever form that takes. At this point, there is a brisket on the 32KK and I'm about to put on some Indian lamb chops on the 19KK to the recipe of the legendary East End restaurant 'Tayyabs'. I'll take some pictures but given my wife has been mixing cocktails and misread my writing where I said 1:1 as 2:1, the vodka ratio is shall we say 'a little strong' and my competence with the camera may decline dangerously. We'll struggle through. It's bitterly cold but bright and sunny in the UK today. I started BBQ'ing with three layers on. After 2 cocktails, I'm walking out in a t-shirt and going 'meah, it's not that bad'. ๐Ÿฅถ

  6. Funny thing happened just now. I had been cooking a Boston Butt since 7:30 this morning while Mrs skreef was at work. When Mrs skreef got home from work she asked what I'd been doing all day. I told her cooking the butt and moped it. He face lite up thinking I had moped the kitchen floor or something stupid like that. I laughed when I explained I had moped the butt with a vinegar sauce. She should have known better.

  9. Happy New Year to you All! Spent yesterday evening making Mai Tai jelly shots for our NYE party. Tasted one this morning. Wow! I think we are going to have to set a two jelly shot limit. The tequila pannacottas are pretty good too. I think I need a lie down.

  11. Howdy, K-K peeps: attached is today's project, about 13 lbs of beef chuck ribs, smoked at around 285-300 with post oak for seven hours. They are no resting, wrapped in butcher paper in the igloo cooler, and will be served later with some nice sides for Sunday dinner. Some days, life is good.....

  17. Braved the 10F windchill last night to grill steaks - Denver steaks from Porter Road. I should have left them on the grill a few more minutes, as they were very rare. Still super tasty and tender though. Plated up steakhouse style with 2x baked spud and creamed spinach, with a nice blue cheese mushroom sauce.

  21. Ground some wheat berries this morning to make 100% whole wheat pancakes. Only the bacon was done on the KK. Those pancakes soaked up the butter and good old maple syrup. I haven't forgotten you, CK.

  22. I put the chips into a bowl and then heat them in the microwave to blow off some steam/lower the moisture content .. They seem to smolder much better if you reduce the moisture.. at least here in humid Bali.. I think it also burns off more undesirables when drier, so a bit cleaner smoke too..

  23. A solid 7 cooking devices but up towards 10 depending on how generous I am with the counting. No need for a restaurant just use the best grill for the food I'm cooking, the current weather and how adventurous I want to go. You can never have too many although Mrs skreef would probably say otherwise. She keeps telling me I'm out of room. I keep promising no more grills. Truth be told I could easily squeeze in another 2 or 3.
