  1. The half grate is built to sit on the left side over the direct heat.. If you are a lefty, you can also use it flipped over on the right. the 1/4" frame would be on top but does not effect cooking.. You can cook indirect over the splitter on the lower grate also..

  3. Hi Forrest.. Always remember that temperature is airflow.. Charcoal always burns at the maximum volume for the loud airflow. Are you sure you had the lid latched? From where the damper top touches the gasket what is "barely cracked" the ear moves how much in inches? The smoker airflow is above the charcoal and so does not really contribute much to airflow thru the charcoal. It's always the damper top setting that controls the exhaust airflow which determines the temp.. And if it's not leaving the damper top, it's not airflow. Always light only a large orange volume of charcoal for low and slow cooks.. The aquarium pump on low would take minutes to fill a balloon.. it's not causing high temps.

  5. New tiles never before made.. Terra Blue Pebble, Bronze Metallic Pebble and Autumn Nebula Pebble Have been asking the factory to make this for years.⁠ I think they're going to be great.. Autumn Nebula The Terra Blue are sorted for shade, tone and character... So there will be both light and darker versions

  9. We've been buried since last June.. Please excuse my not spending much time here. Sai wanted some Pastrami so I grabbed two brined brisket pieces from the freezer. I have a German butcher here who sells pastrami and I've talked him into selling me uncooked ones.. uncooked piggy bellies for bacon and shoulders for ham too. I soaked them in fresh water a half hour to reduce saltiness.. hit with pepper again.. Some coffee smoke at 235º no wrap because I fell asleep.. pulled at 205º the thin flat with little fat was typically a bit drier than it would have been wrapped but the thicker piece as you can see is heavenly.. I love when meat gets this oyster shell look.. Yes it tastes as good as it looks..
  10. The shipping companies won't let me ship any charcoal from Indonesia because they consider it semi hazardous cargo. At some point a bean counter decided that if ships were over X full they didn't want to take semi hazardous cargo. All ships are full and they won't take any.. That being said, I'm working with a company in another country that can still ship on one line.. Keep your fingers crossed.
  11. My Stock Text-expander answer.. The 32" is more of a grill that smokes and the 23" is a smoker that can grill. If you want to smoke/cook low and slow, brisket, butts and ribs.. the 23" Ultimate has great capacity.. it can do 5-7 pork butts / 50-60lbs of meat. More than most residences will ever need. If you want to "Grill" for a 6 or more the 23" is limited by its size. You just can't throw on 6-8 steaks at once... The 32" and 42" are full size grills, I define a full size as 22" front to back. Full size gas grills start at 32 " and run into the low 60's. 32" is the smallest full size gas grill. They have more low and slow capacity than most will ever need. The 32" is no slower nor does it use noticeably more fuel. There is a charcoal basket splitter/reducer that lets you do small cooks using only a portion of the charcoal basket. That being said, if you want to work a bit you could reverse sear 6-8 steaks and then brown them up three at a time on a 23". Gets the job done, but that being said, the smallest full size gas grill is a 32".. the 30" is no longer 22" front to rear.
  12. We put a lot of thought into design in the ash storage and removal. Most other grill can't I hold much ash and there is a small retaining wall below the draft door which makes removing the ash difficult. This is why they made the ash drawer. Making the floor of the KK flush to the draft door makes ash removal much easier. The glazed pot Kamados are also much smaller in size, there is no way a drawer could be used on the larger KKs. I understand how at 80 this could be challenging but I'm guessing it was much more do-able when you got your grill in 2010. It might just be time for you to delegate the task of cleaning out the grill to someone else. The good news is that the grills hold a lot of ash before they need to be emptied. I often just push to the rear and pack ash many times before actually emptying it out. If there is any humidity it packs pretty well.
  13. The old school heat deflector traps heat down below and gives worse performance.. KK's have plenty of thermal mass and the insulation means you don’t need a heat sink to add stability when the ambient temps change or the wind blows like the ceramic pot Kamados.   17. The true test with smoke is to wave some into your face.. it your eyes burns like hell, it's not going to taste nice.. It's basically wood alcohol fog so of course it burns..
  18. Someone just wrote me and asked about this.. I have not been able to get a reply from TelTru but I asked Uncle Google and was given the following.. Temperature range: The bimetallic thermometer should be within the upper and lower limit temperatures. Due to extreme temperatures, metals may reach their expansion limits and not rebound causing the thermometer to be permanently damaged. Looks like it's best to bring them indoors.   20. Yes that might work on the 16 or 19.. But these are much more necessary in the other grills because the draft doors are not flush to the floor of the grills like in the KK. This feature makes ash removal MUCH easier then the glazed ceramic pot kamados.
  21. Just wanted to let you know that last week, both Mimi and my accountant tested positive for COVID, on Monday 4 more tested positive. Only one is in the hospital (she's stable) the others are doing well.. we delivered their computers to their homes today and hopefully they will be able to work some tomorrow..   23. I forgot about one and left it an extra 8 hours.. my wife loved the beef jerky bark and the inside we mixed with chopped jalapeños and Best Foods mayo to make brisket dip.. Was awesome with fresh corn chips.. The fam wants me to do it again!
  24. We have a solution that works on all motors.. We've made the shaft shorter but welded a washer to prevent it from sliding into the motor... will work on all the different motor sockets with the new bracket.
  25. My first Zoom call and definitely the first KK Zoom un-crating .. It was lots of fun, multi cameras running.. I forgot to take my nap earlier as planned so I was dead tired but hung in there the full three grills. Congrats Kemi.. Looking forward to your first cooks..
