    I saw your equipment and in comparison when I buy meat it's generally for 5-6-10 folks at the most. Consider me a light weight, I'm ok with that. My norm and yours are quite different

    That's allotta pork belly. 5 or 6 lbs Is the norm. Have you prepared it yet? Good size brisket also. Enjoy the new experience.

    Hey Ed, Generally they recommend a higher temp for pork belly, a little browning on the flats is what I looked for and I thought it was good. If your looking for a smoke first and heat later then a cold smoke is good. I know a technique for cold smoking you could apply, if your interested. It's a little involved to write but pretty simple to employ.
  9. That's a pretty picture. Now for the weekend, Philly at home is always a good thing, shoulda been New Orleans there but for a stroke of bad luck it didn't happen. New England and the Jags really don't match up except in hype, so the prediction is New England and Philly squaring up again in the Super Bowl. You know brisket is always good for Super Bowl parties, chicken wings and a few other things. Enjoy
  10. Nah, seems to me that's a beast waiting to come back to bite when he leaves. Gotta ask you though, I was with my brother at lunch the other day and he mentioned he had ordered some "chicken salt" from Australia. Said it was a real popular thing and all the locals were putting that over everything so much so that it became an internet wonder. He has a bottle for me but, I was thinking maybe you have some and what you thought of it. Thanks

    The one thing about retirement is your wondering what to do with your time, well, today I went to market and spent way too much time in the produce section. Parsnip, carrots, tatoes, yams, turnips, Vidalia onion, Brussel sprouts, string beans, broccoli, cauliflower, red & green peppers, butternut squash, celery, eggplant and more all steamed up in the KK. Cooked on different levels according to variety and just a little sea salt to draw the flavor. Some steak tips med/rare. Just right on a cold winter nite.

  17. I would have to say brie is sinfully good on it's own...mixed with something sweet and you enter a dangerous area. If your wife has never had it well that will soon change. My wife and I buy brie when we vaca in Stockbridge Ma {Norman Rockwell's home} from local farmers that have knack for making this delicious cheese. A good mix, don't eat too many...they have a tendency of staying with you

    Tried two rubs and one marinade, all good. Finished with White balsamic mixed with a little honey. Scallops sauteed in butter and garlic, sweet potato fries with broccolini. Hey, I like salmon with just salt and pepper but always looking for something different

  21. Great idea. I bet it was tasty, nice of you to stop and save some for others. I also was thinking along the same lines and thought about a sweet chili and lime sauce for some salmon I bought yesterday. The colors look fantastic with the added veggies and white balsamic is a plus and sure to please. Thanks for the idea, I will use part of it today

  23. That was very tasty, moist and fell apart with a slight tear. Text book. The meat was slightly spiced as far as I could determine for a natural taste? Definitely will have to visit your stand for one of those sandwiches.
