I can't believe i've never cooked corn this way before, pulled the husk back and removed the silk then folded the husk back up and soaked for 20 minutes, cooked at 375 for about 40 minutes turning once. The corn was so sweet and juicy it didn't even need butter. Then did cheeseburgers on the lower grate. Forgot to take pics of the burgers while cooking. That was my big meal yesterday after a late Saturday night seeing Loverboy and Foreigner at the Xfinity Center in Mansfield MA. What a great show :)

Had friends round to dinner- ended up also being a watching party to see the Matilda’s beat France in the women’s soccer World Cup quarter final. What a night.

11lb brisket, 10hrs at 275, post oak chunks and meat church holy cow. 2hr rest. Espresso BBq sauce, horseradish cream sauce, spicy salsa, smashed roast potatoes, coleslaw, salad, beer, wine, adrenaline…

Some Huli huli chicken thighs stuffed with Ritz cracker schrimp and other things and then wrapped in bacon. Homemade pickles and pickled beets as sides, kind of a diet meal except for the bacon.

I finally used that donair meat I made a week ago or so. I made the pita bread this week so it was donairs for lunch today.

Next and last chore for the day is to roast some espresso coffee beans. :)

I did a lot of cooking this weekend. It started with duck breast for my lady friends birthday. It is her favorite ❤️ 

Then some chicken drumsticks with fresh corn and squash and zucchini fresh from the garden. I forgot pick of the duck cooking. I think I ate too much lol

It's all I got. That camera just isn't around when I'm cooking but at least we saved this before it disappeared.  Broccollini and asparargus with a baked potatoe and salmon. I wrapped the asparagus in Al with olive oil coating just on the Al then added a few pieces of pepper and onion with fresh herbs like dill, oregano, chive and a dab of salt &butter. They steamed well in the package and the extras all added to a different asparagus experience. Definitely do that again.

Dog Dayz of Summer are here. Heat index over 100F to 115F all week! Quick cook of a Denver steak and local corn.

MacKenzie, did you roast those beans on your KK? If so, give me some guidelines please.

Tekobo, That chicken is killer. How did you get it that crispy?

I have been busy curing and smoking 20 pounds of bacon. I split the final product with friends, They give me and gave me lots of help including the slicing and packaging of the bacon.

Had chicken thighs this week along with fresh potatoes and beans from the garden. Everything is so late this year, weeks behind.

Finally had a feed of corn, Fresh corn came from a local garden. It was soo good.

@MacKenzie - understand "lateness" this year. Local corn folks have suspended harvesting due to the excessive heat, but also the severe lack of rain has slowed the ripening of some of their fields. No corn this past weekend. They hope to resume harvesting soon.

It can’t be summer without corn !!!!

 

But I managed to do some cooking this weekend. Started with a pair of butts for a birthday cookout. 17 pounds of pork and some bread of course. And then today a friend requested some ribs for a lunch they were throwing. So if I was making ribs for someone else I might as well make some for me too 😁 The ribs are still resting. It was a busy week, I did a few Senior Yearbook photo shoots and Thursday night went to see Bruce Springsteen in Foxborough, great show 👍👍👍
