I’ve been absent for a while, at least in the Forum, but not when it comes to having great fun with the 32”

We had some pulled chicken

Merry Xmas to all.
Just to throw you northern hemisphere dwellers off, I’ll be sitting on a beach under shade and swimming on the hour at a place called Tugun. Look it up, it’s a magic place.

13 lb turkey smoked yesterday for our giant Christmas day pot of Gumbo. Bones and a collection of veggie trimmings I've been saving for the last couple of weeks simmered down for the stock. Very tasty dinner last night.

I think this is the prettiest bird I have ever cooked, spatchcock, grill settled in at 310 degrees, took about 2 1/2 hrs. Used peach as the smoke wood.

Now @Aussie Ora has a partner in crime....sending thoughts of sandy beaches and warm winds....................... while we are freezing our toes off. 

@Basher That dastardly Aussie Ora also sends pictures of sky blue waters and sandy beaches along with the descriptions of summer fun.

Merry Xmas everyone, hope you’re all having a great time with friends and family over the holidays.

We spent Xmas day at my wife’s family’s. they requested beef ribs which I’ve cooked before and they all loved them, needless to say that this time was no exception.

Started the day with two loaves of sourdough. Steamy in there without any extra moisture added.

Both of the boys were rolling today.

Roast beast on the 32 whilst the 23 cranked out the appetizers and sides.

I don’t yet own a KK (it’s on the “maybe” column as we haven’t decided if we will build an outdoor kitchen in).  Still, I love seeing these cooks.  Passion for the food is where it’s at!  Pequod, what is the cookie sheet doing on the lower rack?

Yum

A tad colder, but I did manage to get in a chicken cook for dinner last night. Both were spicy - on the left was a teriyaki (Adoboloco) and the right was mango habenero sauce (blend of Dinosaur and Melindas). Direct @ 375F over peach wood. I slashed the skin on the teriyaki one to allow it to penetrate better while marinating.
