qundoy Posted December 24, 2019 Report Share Posted December 24, 2019 13 lb turkey smoked yesterday for our giant Christmas day pot of Gumbo. Bones and a collection of veggie trimmings I've been saving for the last couple of weeks simmered down for the stock. Very tasty dinner last night. I think this is the prettiest bird I have ever cooked, spatchcock, grill settled in at 310 degrees, took about 2 1/2 hrs. Used peach as the smoke wood.
